- Seasoning – This recipe can be made with different types of seasonings. Add in red pepper flakes, minced garlic, ginger, or for a hint of sweetness add in brown sugar.
- Vegetables – Another delicious addition is add in shredded carrots or cabbage towards the end of cooking time.
- Coconut Milk – Add in full fat coconut milk for a creamy texture.
Step by Step Instructions
- Step 1 – Add the chicken, peanut butter, soy sauce, honey, lime juice and chicken broth to the crock pot. It is that simple.
- Step 2 – Cover and cook on low for 6 hours or on high for 3 hours.
- Step 3 – 30 minutes before serving stir in the red peppers and cilantro. You don’t want the bell peppers to be overcooked so it is important to not add those until right at the end.

Ingredients
- 3 chicken breast boneless Diced
- 1/2 cup peanut butter
- 1/3 cup soy sauce
- 1 tbsp honey
- 1 lime Juiced
- 1 cup chicken broth
- 1 red pepper cut in strips
- 1 bunch fresh Cilantro divided
- 1/4 cup roasted peanuts chopped for garnish
Instructions
Add the chicken, peanut butter, soy sauce, honey, lime juice and chicken broth to the crock pot.
Cover and cook on low for 6 hours or on high for 3 hours.
30 minutes before serving stir in the red peppers and cilantro.
I served over white rice topped with the chopped roasted peanuts.
